Brewing Yeast

Yeast is produced designed to make an array of beers, ciders and other distilled beverages. Brewing yeast can either be dry or liquid depending on what kind of beer you are looking to brew. In fact, there are a variety of different yeasts available even with that starting point as a division.

Brewers differentiate between top-fermenting and bottom-fermenting yeasts. The former yeasts form foam at the top of the wort during fermentation. Typically the result of these brews is a higher alcohol concentration and a sweeter beer.
Bottom-fermenting yeasts, on the other hand, leave a crisper taste, and are typically used to brew lagers. In both cases, yeast is distributed through the beer while it ferments, and then the yeast clumps together and precipitates at the bottom of the vessel at the end.

Wherever you buy yeast, make sure it comes in an oxygen protected package, especially if it is going to be shipped to you. This will ensure that it arrives fresh and works properly.
